Ask almost any foreign food traveller what they ate in Bali and babi guling comes up fast. It is spit-roasted suckling pig with shatteringly crisp skin and a turmeric-lemongrass spice paste that defines Hindu Bali. Here is how to eat it properly in Ubud — without the tourist traps.

What is babi guling?

A whole young pig is rubbed inside and out with basa gede / base genep (shallots, garlic, turmeric, galangal, lemongrass, chili, and more), stuffed with cassava leaves or spices, then slowly turned over coconut-husk coals for hours. The skin lacquered to a glass crackle; the meat stays juicy from its own juices and the paste.

On the plate you usually get: steamed rice, slices of roast pork, shards of crispy skin (kulit), a length of urutan (spiced sausage), a scoop of lawar, and a small bowl of broth. That full plate is often called nasi babi guling.

  • If you do not eat pork, skip this dish entirely — try ayam betutu or nasi campur instead
  • Ask for sambal on the side if you are heat-sensitive
