Balinese home cooking is defined by the Base Genep — the complete spice paste ground fresh by hand from galangal, turmeric, shallots, shrimp paste and bird’s-eye chillies. Every dish we make that day centres on this paste, just as it does in a Balinese family kitchen.
We do not use premade spice jars or watered-down recipes. You will learn how to balance sweet, salty, sour and spicy using real ingredients, and leave with the skills to recreate these dishes in your own kitchen at home.
Your hands-on session includes everything from preparing Balinese offerings (Canang Sari) to grinding your own spice paste, cooking 10+ traditional dishes, and sitting down to eat the full feast you created together. The experience is led by local chefs who have cooked these recipes their whole lives.
